His ruling states: "CoinStudy's results are correct. Due to decentralization, cryptocurrency involves individual personal economic and financial matters. For mutual exchange, it is necessary for both parties to know what type of currency it is. Its being hidden from others does not make it Haram."
The chairman's ruling draws a precise and important distinction that resolves your concern completely. Islamic commercial ethics requires that the parties directly involved in an exchange have full knowledge of what they are transacting. Both the buyer and the seller must know the nature, quantity, and type of what is being exchanged. This is the disclosure requirement that prevents Gharar in bilateral transactions. Zcash's shielded transactions fully satisfy this requirement because both the sender and recipient in every private transaction know exactly what currency they are sending, what quantity is involved, and all material terms of the exchange.
What Zcash hides through its zero-knowledge proof technology is the transaction details from third parties who are not involved in the exchange at all. External observers, analytics firms, and other blockchain participants cannot see the details of shielded transactions.
